Traders Hotel, Shenyang has been awarded a Hazard Analysis and Critical Control Point System certification, making it the first hotel in Shenyang and the first Traders hotel in China to become HACCP certified.

HACCP is a food safety system that is one of the most sought-after accreditations in the hospitality and food industries. It includes hazard analysis, identifying critical control points, establishing critical limits, monitoring procedures, taking corrective actions, undergoing verification procedures, and record-keeping and documentation. The food safety system at Traders Hotel, Shenyang is based on HACCP principles, and guarantees food safety by identifying and controlling potential food hazards.

Thirteen Shangri-La hotels are now HACCP certified, with 38 hotels anticipated to be awarded the certificate by 2008. In addition to the recently certified hotels, others in the mainland include Shangri-La Hotel, Pudong; Shangri-La Hotel, Fuzhou; and Shangri-La Hotel, Dalian.

On the basis of the current food safety management system, Traders Hotel, Shenyang evaluates and strengthens food safety methods, which consist of the purchasing, transportation, storage, processing and service of food. Through the analysis of each operational procedure, many control points, including eight key ones, were established and the hotel carried out relative control, rectification and verification programs to comprehensively prevent food safety hazards.

The food and beverage service and kitchen staff also had to undergo intensive training on food safety, and strictly follow the hotel's food safety management policies to ensure food safety for the customer. A dedicated food hygienist in the hotel also oversees the implementation of the HACCP through education, training, execution and maintenance of the program in order to ensure its ongoing effectiveness.
