Biologist: Glowing bacteria in pork not hazardous

The Beijing Municipal Center for Food Safety Monitoring detected pseudomonas fluorescens, a type of bacteria that emits fluorescent lite, in pork provided to them by consumers who complained that the pork glowed at night.

The center did not find fluorescent brightening agents in the pork but detected fluorescent bacteria.

The Beijing Administration for Industry and Commerce said that the fluorescent pork may be contaminated with pseudomonas fluorescens in the processes of slaughtering, storage, transportation and sales.

Wang Hexiang, a professor at the Department of Microbiology under China Agricultural University, said that pseudomonas fluorescens can produce yellow-green fluorchrome which makes the contaminated pork emit light.

Pseudomonas fluorescens can easily grow and reproduce in protein-rich food, such as meat and meat products, as well as poultry and poultry products. These bacteria stop growing when the temperature is above 42 Celsius degrees, and die in a few seconds when the temperature is above 70 Celsius degrees.

Pseudomonas fluorescens are a normal kind of bacteria in the human intestines, and thus do not affect human health.
